At just 14 years of age, Copey realized his purpose in life. He developed a 1 person Catering business, which lasted for 2 seasons. This was ultimately the beginning of his Culinary Career. By the time he was 16, he was the chef at the Burlington Country Club (Vermont), for the next 2 years. Throughout the 80’s, strengthened and perfected his culinary skills, while employed at top restaurants in Burlington, VT. Copey attended the Culinary Institute of America, for Executive Chef Status.
Taking a brief break from Vermont, Copey went to Martha’s Vineyard, Ma. for a General Manager’s position for 2 Edgartown family restaurants. Upon his return to Burlington, VT., at age 30, Copey purchased the Daily Planet, a “unique restaurant before its time”. Here, he successfully owned and operated the Daily Planet, for the next 28 years.
In 2018, Copey purchased the Old Dock, fulfilling a dream of his for many years.
